Still on that foodie Friday vibe, today we are focusing on lazy weekend meals and my darling Rozie, has shared her very easy to make chinese stir fried rice. Spare a few minutes this weekend to try this yummy recipe for that quick lunch or dinner. Enjoy
¾ cup finely chopped onion
2½ tbsps oil
2 tbsps dark soy sauce
Boneless chicken breast, chopped and pre-boiled
¼ cup cashew nuts
½ cup finely chopped carrots
4 cups cold cooked rice
2 cups bean sprouts
Green bell pepper (Hoho), chopped
Red bell pepper
Yellow bell pepper
Heat 1 tbsp oil in wok, add chopped onions and stir fry until onions turn a nice brown colour, not burnt. Remove from wok.
Heat the rest of the oil in the wok; add the chicken pieces to the wok, along with carrots, cashew nuts and cooked onions. Stir-fry for 2 minutes.
Add rice, bean sprouts, and chopped green, red and yellow bell peppers, tossing to mix well, stir-fry for 3 minutes.
Add 2 tbsp of dark soy sauce and fold in. Stir-fry for one minute more and serve.
